The Ultimate Chocolate Chip Cookies
The other morning Jack spontaneously said "I wanna make cookies!!", after arguing the "no cookies until all your lunch is finished" memo, we finished lunch and then made some! I don't bake often enough -- One, because I'm not the greatest baker. Two, my kids are always in on the baking parade, therefore the recipe is sure to taste a little extra salty, dry or over-stirred and extra loved if you know what I mean. Three, we're trying to avoid high sugar foods, although sometimes you gotta feed that sweet tooth! Sometimes I just have to let the boys have some fun and with that being said, I have an absolute favourite chocolate chip cookie recipe to share and the best part, it's basically fool proof! As you can tell from the photos below, my baking entourage was very "involved"... So as-to why the recipe is fool proof -- I didn't have baking soda so I substituted with baking powder. I didn't have enough time to dissolve the baking powder into the 2 teaspoons of water, they were added separately. Salt was thrown in. The boys were busy scooping flour into the mixture when I wasn't looking. And the mixture was continuously being stirred the whole time. I'm pretty confident these are excellent cookies for kids to make that still taste amazingly delicious! These cookies are crispy on the outside and soft in the inside, talk about the ultimate chocolate chip cookie, right!?
The Ultimate Chocolate Chip Cookies
Ingredients
• 1 cup butter, softened• 1 cup white sugar• 1 cup packed brown sugar• 2 eggs• 2 teaspoons vanilla extract• 3 cups all-purpose flour• 1 teaspoon baking soda• 2 teaspoons hot water• 1/2 teaspoon salt• 2 cups chocolate chips*Another option: substitute 1 cup of flour for 1 cup of instant or blended oatmeal!
Directions
Preheat oven to 350 degrees F. Cream together the butter, white and brown sugar until smooth. Beat in eggs and stir in vanilla. Dissolve baking soda in hot water, add to batter along with salt. Stir in flour, chocolate chips. Drop spoonfuls onto parchment lined baking sheets. Bake for approximately 10-12 minutes, or until edges begin to brown.
