Blueberry Banana Muffins

The past few weekends have been busy ones and as crazy eventful as summer can be, its nice to get back into routine throughout the week. Since monday is usually our stay at home day, I decided to bake the boys some blueberry banana muffins. Max was a huge fan and must of had one at every snack time!

Ingredients

• 2 cups whole wheat flour• 1/2 cup brown sugar• 1/2 teaspoon ground cinnamon• 2 teaspoons baking powder• 1 teaspoon baking soda• 1 1/2 cups mashed bananas• 2 eggs• 1 teaspoon vanilla extract• 1 cup fresh blueberries

Crumble Topping

• 1/2 cup brown sugar• 1/2 cup whole wheat flour• 1/2 teaspoon ground cinnamon• 2 tablespoons butter, softened

Directions

Preheat oven to 350 degrees. Lightly grease 12 cup muffin pan. In a large bowl mix the whole wheat flour, brown sugar, cinnamon, baking powder and baking soda. In a separate bowl mix the bananas, eggs, and vanilla extract. Combine the banana mixture into the flour mixture until smooth. Fold in the blueberries gently using a spatula. Spoon the batter into the prepared muffin pan. Sprinkle crumble topping on top of muffins.
